INGREDIENTS
½ large apple, peeled and cut into small bite size pieces
1/4 C B&R Farms Diced Dried Apricots
1 T fresh lemon juice
4- 6-7” flour tortillas
2 T vegetable oil
½ C walnuts, toasted and chopped
3/4 C crumbled Stilton
DIRECTIONS
Preheat oven to 500F. In a bowl, stir together apples, apricots and lemon juice to make salsa and set aside. Put two tortillas on a baking sheet and brush with some oil. Turn tortillas over. Sprinkle tortillas with walnuts and Stilton and cover with two remaining tortillas, pressing gently. Brush tops with remaining oil and bake in middle of oven until golden, 8-10 minutes. Cut into wedges and top each wedge with the apple-apricot salsa. Serves 4.
