INGREDIENTS
1 C all purpose flour
1/2 C flax seed meal
1 t baking powder
1 t baking soda
1 t cinnamon
1 C ea: butter, granulated sugar, brown sugar
2 eggs
1 t real vanilla
2 C wheat cereal flakes
2 C rolled oats
1 1/2 C local walnuts, toasted and chopped
1 1/2 C B&R Farms California Dried Apricots, diced
DIRECTIONS
Stir together flour, flax seed meal, baking powder, baking soda & cinnamon until well mixed; reserve.
Cream together butter, add sugars, then add eggs & vanilla, beating until light and fluffy.
Stir in flour mixture; blend well.
Stir in wheat cereal, oats, walnuts & apricots.
Drop batter from a teaspoon onto lightly greased cookie sheets, 2" apart.
Bake in 325F oven 12-14 minutes or until golden.
Cool 2 minutes before transferring to wire racks.
