INGREDIENTS
1/2 C unsweetened cocoa powder, sifted
1 C All-purpose flour
1/2 t baking powder
1/4 t salt
2 eggs
3/4 C granulated sugar
1/4 C brown sugar
1/2 t instant coffee granules
11/2 tsp real vanilla
1/3 C olive oil
2/3 C B & R Farms Diced Dried Blenheim Apricots
1/4 C milk or dark chocolate chips
1/4 C milk or dark mini chocolate chips
DIRECTIONS
Preheat oven 350F and coat 9” square baking dish with cooking spray.
In a small bowl, combine cocoa, flour, baking powder and salt.
In a large bowl, beat the eggs and grad. sugar until light & fluffy. Add brown sugar, coffee granules and vanilla; beat additional 2 minutes.
Add oil in slow stream, beating 2 minutes more.
Stir in dry ingredients.
Mix in apricots & 1/4 cup chocolate chips.
Spread into pan, sprinkle with mini chips.
Bake 20-24 min. or until the center is slightly firm.
Be careful not to over bake.
Cool on wire rack, cut and serve.
Makes 16 brownies.
