Apricot Banana Tea Bread

INGREDIENTS

1 ¾ C sifted flour
2 t baking powder
¼ t baking soda
½ t salt
1/3 C soft shortening
2/3 C granulated sugar
2 eggs, unbeaten
1 C mashed ripe banana (2 or 3)
½ C B&R Farms Dried Apricots

DIRECTIONS

Heat oven to 350°.Grease loaf pan.

Place ¼ cup of flour and the apricots in food processor and finely chop apricots.

Sift remaining 1½ cups of flour with baking powder, soda, & salt.

With mixer at medium speed, thoroughly mix shortening with sugar, then with eggs, until very light & fluffy- about 4 minutes.

Mix in bananas and apricots. Then, at low speed, beat in flour mixture just until thoroughly mixed; turn into pan.

Bake 1 hour or until cake tester comes out clean.

Cool in pan 10 minutes; remove. Cool overnight before slicing.
