Recipe: Apricot, Apple and Carrot Oatmeal

Ingredients

  • 1 cup rolled oats
  • 2 cups milk or water
  • 1 medium apple, peeled and chopped
  • 1 medium carrot, peeled and grated
  • ½ cup diced apricots
  • ½ tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 2 tbs chopped nuts or seeds (almonds, walnuts, etc.)

Directions

  1. In a medium saucepan, bring water or milk to a boil then add the rolled oats and salt. Reduce heat to simmer and cook for 5-7 minutes, stirring occasionally until the oats are soft and creamy.
  2. Once cooked, add In the apricots, apple, carrots, cinnamon, and vanilla. Let it continue to cook for an additional 2-3 minutes until the apples are softer and the carrots are tender.
  3. Once ready to serve, top with the chopped nuts.
