INGREDIENTS
5-1/2 cups chicken or vegetable broth, divided
1 cup B & R Farms Dried Apricots, chopped
6 Tbsp butter or margarine, divided
1 cup each uncooked wild rice & brown rice
1 cup almonds, sliced or silvered
½ cup minced fresh parsley
1/4 tsp each salt & pepper
DIRECTIONS
In a small saucepan, bring ½ cup broth to a boil. Remove from the heat; add dried apricots and set aside (do not drain). In large saucepan, bring 3 cups of broth and 2 Tbsp of butter to a boil. Add wild rice; cover and simmer for 55-65 minutes or until rice is tender (drain if necessary).
Meanwhile, in another saucepan combine the brown rice, 2 Tbsp butter and remaining broth. Bring to boil. Reduce heat; cover and simmer 35-40 minutes or until rice is tender (drain if necessary). In a skillet, sauté the almonds in remaining butter until lightly browned. In serving bowl, combine the wild rice and brown rice, dried apricot mixture, almonds, parsley, salt and pepper. Yield: 10 servings
