INGREDIENTS
1 lg onion, red or yellow sliced
1 ½ C shredded Mexican cheese
sprigs of fresh cilantro
4 flour tortillas
10 oz B & R Farms Dried Apricot Chili Preserves
option: cooked chicken, diced
DIRECTIONS
Take the flour tortillas and spread 2 tablespoons of dried apricot chili preserves on each. Add onion, cheese, cilantro (& chicken, is using). Place one side on the other and toast on both sides until cheese melts in a medium heat fry pan. Or place on cookie sheet and warm in oven at 400F for 8 minutes or until cheese is melted.
Serve with additional apricot chili preserves for dipping. Add a fresh fruit or green salad for a complete meal!
