Golden State Chicken Salad
If you have never tried chutney, this is THE recipe to try.
3 C rotisserie chicken meat, chopped & chilled
½ C light mayonnaise
3 T B&R Farms Dried Apricot Chutney
3 T minced red onion
2 ribs celery, chopped
1 ¼ t curry powder
Luttuce or pita pockets
Stir together all ingredients in a medium bowl and chill for an hour, ideally. Serve over a bed of fresh mixed greens or in a pita pocket lined with lettuce. Serves 6.
Easier recipe: buy premade rotisserie chicken salad in your grocery store deli case & just stir in B & R Farms Dried Apricot Chutney to taste (start with 3 T and add from there to your liking)
